Lemon Posset

1 ½ pints of double cream
9 oz caster sugar
Juice of 3 lemons

Heat the cream and the sugar together in a pan and cook for 2-3 minutes. Add the lemon juice and mix well. Leave to cool slightly and then pour into glasses or espresso cups and leave to set in the fridge. Easy.
